Looks like HMV Japan already has the Gergiev Mahler 8th for sale. This was performed in St. Paul's Cathedral (huge!), and the BBC 3 broadcast on the web sounded pretty darn good. We'll see if the same is true for the LSO Live recording.

If LSO has already recorded all of Gergiev/LSO Mahler cycle, why don't they just release the whole set (as well as the individual discs) at once?

They might do so. IIRC, the Haitink/LSO Beethoven cycle was released as a boxed set before one or two of the individual symphonies. That is one of the reasons that I am sticking with the MP3 downloads from eMusic for now. I'd prefer to have the CD's as part of a box set. And even though I have been known to purchase the individual releases plus the box set in some circumstances (Chailly, Gielen, Lennie), this is not one of those cycles for my money.

No. I wouldn't expect it to show up there until just before the mid-March release date of the physical disc.
